Chicken, Broccoli and Pesto Gnocchi Tray Bake

This is a super easy weekday dinner to make and you can prepare it in the morning, stick it in the fridge and then whack in the oven when you are ready to eat. I really enjoy baked gnocchi and in this recipe you get the bottom browning nicely, adding some texture to the meal. I sometimes replace the chicken and bacon with sausage which is nice.

Slow Cooker Chilli

I don’t know if this is anywhere near a traditional chilli but it is my version and super tasty. Serve with some rice, coriander and condiments and you’ve got yourself an easy comforting winter dinner. This recipe is fairly mild so if you like it hotter just add more chilli powder or add some fresh chilli on top when cooked. I have a slow cooker where the internal pot can go on the hob but if you don’t have one of these just cook the meat in a frying pan then add to the slow cooker pot. This recipe is best cooked on low for 8 hours but if you don’t have time you can cook on high for 5 hours instead. I would recommend browning the meat first as it adds some flavour but if you are short on time you can just throw this in the pot as it comes.

Lasagna

Everyone loves lasagna! It makes a great, tasty weekend treat for the whole family to enjoy. I like to serve mine with a rocket salad and some garlic flatbread. A lot of lasagna recipes use a white sauce then sprinkle cheese on top but I really like to add some extra cheese into the sauce to make it a bit more decadent. If you don’t fancy that, then just leave the extra cheese out of the sauce.
