Soup is really easy to make and easily freezes, giving you a quick easy lunch on a cold day. Serve with some nice chunky bread and butter or more up my street, some savoury muffins. Just scale up the ingredients to make bigger batches.
You can pretty much make soup with any flavours, but below are some ideas to get you started. The base is usually the same with the main ingredient changing the flavour. I like smooth soup, so tend to blend them all and not worry about the size of the pieces I am cooking. If you want a chunky soup then you need to take a bit more care when chopping the veg so they are a nice size when eating. As the soup is smooth, it’s important to have an accompaniment with a bit of texture. I really like a savoury muffin or a nice slice of crusty bread but if you don’t want as much as that, then some crispy croutons or some toasted seeds on top would work wonders.
