So this is a bit of cheat recipe as I am using a pre made Peppercorn Sauce. It does give a nice, quick brunch or supper idea though, so I thought I would add it to the blog. I’ll update it when I’ve perfected the sauce myself!
Serves 2
Ingredients
2 Large slices of sourdough bread (or any other good quality bread – rye is a good one)
Large know of butter
200g Chestnut Mushrooms
4 Slices of smoked bacon
1 Sachet of good quality peppercorn sauce
Handful of chopped fresh parsley
Method
- Chop the mushrooms into large bite size pieces
- Melt the button in a pan, add the mushrooms and cook until soft
- Meanwhile grill the bacon
- Toast the bread
- Heat the peppercorn sauce
- Place the bread on the plate, topped with the bacon, then the mushrooms, drizzle with the peppercorn sauce and sprinkle with the parsley
- Enjoy!
