Mushrooms and Bacon on Sourdough with Peppercorn Sauce

So this is a bit of cheat recipe as I am using a pre made Peppercorn Sauce. It does give a nice, quick brunch or supper idea though, so I thought I would add it to the blog. I’ll update it when I’ve perfected the sauce myself!

Serves 2

Ingredients
2 Large slices of sourdough bread (or any other good quality bread – rye is a good one)
Large know of butter
200g Chestnut Mushrooms
4 Slices of smoked bacon
1 Sachet of good quality peppercorn sauce
Handful of chopped fresh parsley

Method

  1. Chop the mushrooms into large bite size pieces
  2. Melt the button in a pan, add the mushrooms and cook until soft
  3. Meanwhile grill the bacon
  4. Toast the bread
  5. Heat the peppercorn sauce
  6. Place the bread on the plate, topped with the bacon, then the mushrooms, drizzle with the peppercorn sauce and sprinkle with the parsley
  7. Enjoy!
